  • 4 Lavash wraps
  • 2 cans chickpeas, drained and rinsed
  • ยผ cup vegan mayo
  • ยผ cup Franks Red Hot Sauce
  • ยฝ cup diced celery
  • ยผ cup diced onion
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • โ…› teaspoon salt
  • ยผ teaspooon pepper
  • ยฝ lemon, squeezed
  • 4 handfuls baby spinach

Instructions

  • In a large mixing bowl, add the chickpeas and mash them to desired consistency using a potato masher or fork.ย 
  • Add the vegan mayo, Franks Red Hot sauce, celery, onion, garlic powder, onion powder, salt, pepper, and lemon. Mix together until well combined.ย ย 
  • Lay out a lavash wrap and spread a layer of the chickpeaย mixture across it. Leave a little bit of room on the sides (about a 1/2 inch). Add a thin layer of spinach on top, and roll the wrap to create a log. Repeat with remaining lavash wraps.ย 
  • With the seam facing down, slide toothpicks into the lavash logs approximately everyย 1.5 inches. Then, using a sharp large knife, slice each lavash wrap into spiralsโ€”about 1.5 inches thick per slice.
