One of our favorite ways to make food beautiful is by pulling inspiration from one of Planet Earth’s most spectacular phenomena: rainbows.
Step 1: Spread the Hummus – Lay the lavash flat on a clean surface and spread the hummus evenly from edge to edge.
Step 2: Add the Rainbow Veggies – Arrange the vegetables in colorful rows over the hummus, starting with red, then orange, yellow, green, and purple. Sprinkle with black sesame seeds if you’d like.
Finally, Step 3: Fold and Serve – Fold the sides of the lavash over the veggies to make a wrap, or trim the edges and serve it open-faced with twine for a fun presentation. Finish with a drizzle of tahini or lemon garlic tahini dressing if desired.

I made this rainbow veggie wrap using cherry tomatoes (red), shredded carrots (orange), sliced mini bell peppers (yellow), cauliflower rice (white), sunflower sprouts (green), shredded purple cabbage (purple), atop homemade lemon hummus on a lavash flatbread wrap from California Lavash.

This wrap I made using mini bell peppers (red), shredded carrots (orange), corn (yellow), alfalfa sprouts (white), avocado (green), cucumber (green), shredded purple cabbage (purple), and a sprinkle of black sesame seeds atop garlic hummus on a trimmed California Lavash.

Lavash is a soft, thin flatbread that is perfect for making wraps because it’s flexible and easy to roll without tearing. It has a mild flavor that pairs well with just about any filling, from fresh veggies and hummus to sandwiches and savory spreads. You can usually find it in the bakery, deli, or bread aisle at most grocery stores.
Rainbow wraps will stay fresh in the refrigerator for up to 2 days when wrapped tightly or stored in an airtight container. For the best texture, keep very watery vegetables dry before assembling, as extra moisture can make the lavash soft over time. If you’re making them ahead, they’re best enjoyed within 24 hours for the freshest flavor and crunch.
Freezing isn’t recommended because the fresh vegetables will lose their crisp texture and release water as they thaw, making the wraps soggy. For the best flavor and texture, enjoy them fresh or within a couple of days of refrigerating.
