If you think tofu is boring, this is the kind of recipe that can change your mind.

Inspired by Korean mayak eggs, this version takes the part we canโ€™t stop thinking aboutโ€”the savory-sweet, garlicky, slightly spicy marinadeโ€”and gives it a new canvas: tofu.

The tofu soaks up all that flavor as it sits, turning a simple block of tofu into something youโ€™ll want to pile over warm rice and absolutely drench in the leftover sauce. And while you can simply cut the tofu into cubes, triangles, or slabs, shaping it into little โ€œeggsโ€ makes this recipe a show-stopping dinner party-worthy main dish.

Best of all, thereโ€™s almost no cooking involved. Mix the marinade, add the tofu, and let the fridge do the work.

Why You’ll Love This Mayak Tofu

  • That marinade. Salty, sweet, garlicky, spicy, onionyโ€”and you’ll want to spoon the extra over everything โ€”ย steamed rice, soba noodles, vegetables, or even avocado.
  • Ridiculously easy. There’s no cooking the tofu. Mix, marinate, eat.
  • Made for meal prep. Make it tonight and tomorrow’s lunch is already better.
  • Have fun with it. Cube the tofu and call it dinner, or scoop it into egg shapes for a show-stopping dinner party dish.

What Is Mayak Tofu?

Mayak tofu is inspired by Korean mayak eggs, which are marinated eggs soaked in a flavorful soy sauce mixture with ingredients like garlic, green onions, chili, and a little sweetness.

Here, weโ€™re using that same basic idea with tofu. Firm tofu acts like a sponge for the marinade, absorbing all those salty, sweet, spicy, aromatic flavors as it rests in the fridge.

This isnโ€™t meant to make tofu taste exactly like an egg. Itโ€™s simply a delicious way to borrow the flavors and inspiration of mayak eggs and turn them into an easy tofu dish.

Key Ingredients and Substitutions

Ingredients for mayak tofu eggs recipe with labels.
  • Firm or extra-firm tofu: Firm tofu absorbs the marinade while still holding its shape. Extra-firm tofu is especially helpful if you plan to carve it into โ€œeggs.โ€ Pressing the tofu first is optional, but removing some excess water can help make room to absorb all that delicious sauce. Avoid soft or silken tofu, which can fall apart easily.
  • Soy Sauce – Helps create the signature dark, flavorful marinade. Use tamari for a gluten-free option.
  • Boiling Water – Boiling water helps dissolve the sugar to create a smooth marinade. Use hot vegetable broth for a little extra savory flavor.
  • Sugar – Balances the saltiness of the soy sauce and adds a subtle sweetness to the marinade. Adjust the amount to suit your taste if you prefer a sweeter or less-sweet marinade. Try maple syrup, agave nectar, or brown sugar.
  • Yellow Onion – Adds a mild sweetness and savory flavor to the marinade while giving it some texture. White onion or sweet onion works well, too.
  • Green Onions – Add fresh, slightly sharp flavor and a nice pop of color. You can use both the white and green parts. Chives or finely sliced shallots can work in a pinch.
  • Red Chili Pepper – Adds heat and gives the marinade a fresh kick. Use red pepper flakes, a small jalapeรฑo, or another fresh chili you enjoy.
  • Garlic – Makes the marinade much more flavorful. Freshly minced garlic gives you the strongest flavor. Use about ยผ teaspoon garlic powder if you don’t have fresh garlic.

Pro Tips for Making Mayak Tofu Eggs

  • Finely dice and slice โ€” Dice the yellow onion fairly small so you get a little onion in every bite. Slice the green onions thinly for the best texture.
  • It gets better with time โ€”The tofu soaks up more of the marinade as it sits, so the flavor keeps getting richer in the fridge.
  • Use it to rescue leftovers โ€” This is perfect over leftover fried rice, poke bowls, or along with pickled veggies!

What to Serve With Mayak Tofu

The simplestโ€”and arguably bestโ€”way to eat mayak tofu is over a bowl of warm steamed rice with plenty of marinade spooned on top.

To turn it into a more loaded bowl, try adding:

You can also serve the tofu over noodles, add it to a grain bowl, or use it to make leftover rice and vegetables considerably more exciting.
