The Secret to Moist Vegan Muffins
Zucchini is one of our favorite baking ingredients because it adds incredible moisture without making baked goods taste like vegetables. Once it’s shredded and folded into the batter, it practically disappears, leaving behind soft, tender muffins that stay fresh for days.
This recipe also uses a simple flax egg, applesauce, and a little oil to create the perfect texture—rich enough to feel indulgent while still being wonderfully light.
How to Make These Rich Chocolatey Muffins
Follow these five simple steps for best vegan chocolate zucchini muffins ever!
Step 1: Prep the Oven – Preheat your oven to 350°F and line a 12-cup muffin pan with liners. Use a food processor to shred the zucchini.
Step 2: Mix the Dry Ingredients – Whisk together the flour, cocoa powder, baking soda, and salt in a large bowl. In a small bowl, mix the ground flaxseed with water and let it thicken for a few minutes.
Then, Step 3: Mix the Wet Ingredients – In another bowl, combine the applesauce, oil, soy milk, sugar, and vanilla. Stir in the thickened flax mixture.
Step 4: Make the Batter – Add the wet mixture to the dry ingredients and stir just until combined.
Gently fold in the shredded zucchini and chocolate chips.
Step 5: Bake the Muffins – Divide the batter evenly among the muffin liners and sprinkle extra chocolate chips on top.
Bake for about 50 minutes, or until a toothpick comes out clean. Let the muffins cool before enjoying!
Ingredient Notes
Here’s what makes these muffins so good:
Zucchini – Freshly shredded zucchini adds moisture and tenderness. Be sure to squeeze out as much excess water as possible before measuring so your muffins bake up perfectly.
Ground Flaxseed – Mixed with water, flaxseed creates an easy plant-based egg substitute that helps bind everything together.
Unsweetened Applesauce – Adds moisture while replacing some of the oil you’d typically find in muffins. Homemade apple puree will work just as well.
Cocoa Powder – A bit of cocoa powder gives these muffins their deep chocolate flavor.
Chocolate Chips – Because every chocolate muffin deserves pockets of melted chocolate. Mini vegan chocolate chips are our favorite!
Tips for the Best Chocolate Zucchini Muffins
Squeeze the Zucchini Well – This is the biggest key to getting fluffy muffins instead of gummy ones.
Don’t Overmix the Batter – Stir just until everything is combined to keep the muffins tender.
Top with Extra Chocolate Chips before baking for bakery-style muffins.
Check for Doneness with a Toothpick – It should come out mostly clean with just a few moist crumbs.

Frequently Asked Questions
Do you peel the zucchini?
Nope! The peel is soft, nutritious, and practically disappears once baked.
Can you taste the zucchini?
Not at all. It simply adds moisture while letting the chocolate flavor shine.
Can I make these gluten-free?
Yes. A good 1-to-1 gluten-free all-purpose flour blend should work well, although the texture may be slightly softer.
Can I reduce the sugar?
You can reduce it slightly if you’d like, but keep in mind that sugar contributes to both sweetness and the soft texture of the muffins.
Are these good for lunchboxes?
Absolutely! These are one of our favorite lunchbox treats. They’re easy to pack, not overly messy, and a fun way to sneak an extra serving of vegetables into the day.
