Instructions
Preheat your oven to 350° F. Line a muffin pan with 12 liners.
In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In a small ramekin, add the ground flaxseed meal and water, mix well, and set aside to thicken. (This is your plant-based egg.)
In another mixing bowl, add the applesauce, oil, soy milk, sugar, and vanilla extract, and mix to combine.
Combine the wet mixture and the flaxseed slurry into the flour mixture and mix just until combined. Fold in the shredded zucchini and chocolate chips.
Evenly fill the muffin liners with batter, and sprinkle extra chocolate chips on the top.
Bake for 50 minutes, until a toothpick placed in the center of a muffin comes out clean. Remove from oven, allow to cool, and enjoy!
