Ingredients

  • cup all-purpose flour
  • cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons ground flaxseed meal
  • 6 tablespoons water
  • ¼ cup applesauce
  • ¼ cup canola oil, (or any vegetable oil)
  • ¼ cup soy milk
  • 1 cup sugar
  • ½ teaspoon vanilla extract
  • 1⅓ cup shredded zucchini, pressed firmly to squeeze out water
  • cup chocolate chips, plus more for topping

Instructions

  • Preheat your oven to 350° F. Line a muffin pan with 12 liners.
  • In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • In a small ramekin, add the ground flaxseed meal and water, mix well, and set aside to thicken. (This is your plant-based egg.)
  • In another mixing bowl, add the applesauce, oil, soy milk, sugar, and vanilla extract, and mix to combine.
  • Combine the wet mixture and the flaxseed slurry into the flour mixture and mix just until combined. Fold in the shredded zucchini and chocolate chips.
  • Evenly fill the muffin liners with batter, and sprinkle extra chocolate chips on the top.
  • Bake for 50 minutes, until a toothpick placed in the center of a muffin comes out clean. Remove from oven, allow to cool, and enjoy!
