Key Ingredients and Helpful Substitutions

Here’s a little info about each one and possible substitutions for this fresh, herby dressing:

Gathered ingredients for this vegan green goddess dressing recipe laid on a flat surface with labels.
  • Cashews – These lovely nuts provide a creamy, rich texture without dairy, making the dressing smooth and luscious. If you don’t have cashews, you can use almonds or macadamia nuts. Soaked sunflower seeds can also work as a nut-free option.
  • Lemon – This citrus fruit adds a bright, tangy flavor that balances the richness of the nuts and tahini. Consider using lime juice instead for a slightly different but equally refreshing citrus flavor. A splash of apple cider vinegar can also be used in a pinch.
  • Garlic – This savory ingredient gives the dressing a bit of a kick. If you’re out of fresh garlic, garlic powder can be used if necessary. For a milder flavor, try roasted garlic or shallots.
  • Tahini – This delicious seed butter adds a rich, slightly nutty taste. Sunflower seed butter or almond butter can be swapped for the tahini. If you want a lighter option, you can use a bit of sesame oil instead.
  • Olive Oil – Lends a richness and helps to blend all the ingredients together seamlessly. A great alternative is avocado oil, which has a similar texture and health benefits.
  • Fresh Herbs – Both parsley and dill give the dressing a vibrant green color and bright, herby flavor. If you don’t have parsley, cilantro or basil can be used for a different twist. For dill, you can substitute it with fresh tarragon or chives.

Helpful Tips and Serving Suggestions

Here’s a few ways to make this versatile green goddess dressing even better:

  • Store it Properly – Keep your dressing fresh by storing it in a sealed container, like a mason jar, in the fridge. It should stay good for about 3-4 days, making it perfect for meal prep.
  • Adjust the Thickness – If you prefer a thinner dressing, simply add a bit more water until you reach the desired consistency. For a thicker dip, reduce the water or add more soaked cashews.
  • Pair with Fresh Veggies – This dressing is a fantastic dip for fresh veggies like carrots, cucumbers, and bell peppers. You could even use pickled veggies! It’s a great way to add extra flavor to your snack time.
  • Use as a Savory Sauce – Drizzle the dressing over grain bowls (like this scrumptious arugula quinoa salad bowl), roasted vegetables, or even vegan pasta salad for a burst of flavor. It’s a versatile sauce that can enhance many dishes beyond just salads.

  • 1 lemon, large
  • 3 cloves garlic, medium-sized
  • ¼ cup tahini
  • ½ cup parsley, tightly packed, with the stems
  • ¼ cup dill, packed
  • ½ cup olive oil
  • ½ teaspoon salt
  • cup water, plus more as needed

Instructions

  • Advance Prep: Soak the raw cashews in water for at least two hours, and then drain and discard the water. If you forgot this step, you can boil them in water for 15 minutes instead.
