When you’re feeling that afternoon slump and need a little pick-me-up, reach for these brain-boosting bites. They’re full of “brain food” ingredients like walnuts, pumpkin seeds, flaxseeds, and hemp seeds which are a great source of omega-3 fatty acids.

Inspired by our date truffles recipe, these truffles take the classic treat to the next level. We’ve added in some extra healthy ingredients to create a nutrient-dense snack that’s perfect for busy mornings, afternoon pick-me-ups, or a healthy dessert! They also make an excellent gift!

What You’ll Need

These brain boost bites just require 8 simple ingredients that you most likely have on hand. All of which can be found in a well-stocked pantry. Here’s the breakdown along with some helpful tips:

  • Dates: Medjool dates are the best choice for this recipe as they are soft and sticky. If your dates have dried out, soak them in hot water for 10-15 minutes to soften them.
  • Nuts and Seeds: We’ve selected the best seeds for brain-boosting benefits. Feel free to experiment with different nuts and seeds to suit your taste preferences. Almonds, pecans, and sunflower seeds are all great options.
  • Vanilla Extract: A touch of vanilla enhances the flavor of the truffles and adds to the sweetness.

How to Make Brain Ball Truffles

Making these brain ball truffles couldn’t be easier. Simply blend, roll, and dip! Here’s the step-by-step process with photos.

Step 1 – Combine Ingredients: In a food processor, combine the pitted dates, walnuts, pumpkin seeds, ground flax seeds, hemp seeds, vanilla extract, and salt. Process until a sticky dough forms. This may take a few minutes.

Step 2 – Form the Truffles: Divide the dough into 12 equal portions. Roll each portion into a ball using your hands.

How to store these truffle bites?

To preserve the flavor and benefits, keep these bites stored in a covered container in the freezer for up to six months. They are delicious straight from the freezer!

Can I use different nuts and seeds?

Absolutely! While this recipe was tested with walnuts, pumpkin, flax, hemp, and chia seeds, you can mix and match. Softer nuts like pecans, cashews, and peanuts are best. Equipment

Ingredients

  • 1 cup medjool dates, pitted
  • ¾ cup walnuts
  • ¼ cup pumpkin seeds
  • 1 tablespoon ground flax seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Optional Coating Ideas:

  • Cocoa powder
  • Powdered sugar
  • Sprinkles
  • Chia seeds
  • Shredded Coconut

Instructions

  • Remove the pits from the dates and add them to the food processor along with the walnuts, pumpkin seeds, ground flax seeds, hemp seeds, vanilla extract, and salt. Process until the mixture turns into a big dough ball. At first, it will turn to crumbles and eventually clump together like cookie dough. It may take several minutes—keep going until a solid dough forms. 
  • Divide the dough into 12 even pieces and roll each piece into a ball with the palms of your hands.
  • If desired, dip each ball into your coating ingredient of choice and roll until fully covered.

Storage: Place in a sealed container and store in the freezer for up to 6 months.
