3 Vegan Meal Ideas To Get Your Family To Eat More Vegetables

As a vegan mom, you’d think I’d have the poster children for kids who eat their veggies.  I have fantasies about my idyllic family dinners where I lovingly spoon mounds of vegetables onto my kids’ plates while they beam back at me with faces of gratitude and gulp down each bite in delight. Only in my dreams!

To curb the dinner vegetable battle, I have a few strategies to get my kids to eat their veggies. I really hate being a nag, especially when it comes to food, so my major strategy is to make it fun, interactive, and give them some control over which veggies they put on their plate.

These three vegan meal ideas let family members customize their own dish with the vegetables they want, while offering lots of options to try something new.

Meal idea #1: Romaine tacos

Swap out the traditional corn tortilla and use a romaine leaf for the shell instead. For fillings, try:

  • Black beans
  • Corn
  • Green cabbage
  • Tomatoes
  • Onion and cilantro relish
  • Olives

Be sure to have lots of homemade guacamole and salsa on hand for topping!

Meal idea #2: Sushi rolls

Spread sushi rice over a sheet of nori. Let the kids choose what to put inside, roll it up, and slice. Some of my favorite sushi fillings are:

  • Baked tofu
  • Shredded carrots
  • Cucumber
  • Avocado

Meal idea #3: Soba noodle bowls

Spoon soba noodles into a bowl and add one or more of these toppings:

  • Shredded carrots
  • Shredded green or purple cabbage
  • Sliced radishes or daikon
  • Cucumber
  • Edamame
  • Chopped water chestnuts
  • Sesame seeds
  • Sliced green onions
  • Chopped peanuts

Drizzle with soy sauce or tamari and enjoy!
