Line a baking sheet with a silicone baking mat (or parchment paper) and preheat oven to 400°F.
Slice polenta tube into 15 rounds (about ⅓-inch thick).
Using a small spoon, add pizza sauce on each polenta round and spread evenly over the round using the back of the spoon, leaving a small border around the edge uncovered. Sprinkle with vegan cheese and top with desired toppings.
Bake for 15 minutes or until cheese is melted and polenta is nicely baked.
