Description
This Asian-style zoodle recipe is mostly raw and jam-packed with nutrition. Plus, it’s very quick and easy to prepare. Move over garden salad, there’s a new favorite salad in town!
Ingredients

Noodle Bowl
- 3 cups of spiralized zucchini
- 1 ½ cups of spiralized carrots
- ½ red bell pepper (thinly sliced or julienned)
- ½ cup of sugar snap peas
- 2 green onions (finely chopped)
- ⅓ cup of cilantro (roughly chopped)
- 1 ½ tablespoon sesame seeds
Sauce
- ½ cup of almond butter (or peanut butter)
- 2 tablespoon of toasted sesame oil
- 1 garlic clove
- 1 teaspoon fresh ginger
- 2 tablespoons of low sodium soy sauce
- 2 tablespoons of lime juice
- 2 tablespoons of water
Instructions
- Add all of the vegetables and sesame seeds to a large bowl and toss to mix.
- In a separate medium bowl, whisk together all of the sauce ingredients until smooth.
- Pour the sauce onto the veggies and mix well to combine. Serve immediately. Store any leftovers in the fridge and consume within a few days.
