Sizzle up strips of your favorite vegan bacon. Once they’re cooked thoroughly (about five minutes), remove from heat and chop into small chunks. Set aside.
Prepare Bisquick batter by adding the soy or almond milk and preferred egg replacer to your pancake mix.
Lightly grease a cooking pan with a little vegan butter and pour a scant ¼ cup of batter per pancake. Distribute a handful of bacon bits onto each pancake. Flip the pancake when bubbles form and cook for an additional 1-2 minutes on the other side. Repeat until no more batter is left!
Serve finished pancakes with a scoop of Earth Balance and drizzle of maple syrup.
