Vegan Brunch Recipe: Bacon Pancakes

You’ll never want to go out to brunch again after eating these delicious vegan pancakes with veggie bacon! A true game-changer!


  • Vegan bacon (we used Lightlife but there are many brands available—or you can make your own!)
  • 2 cups of Bisquick Pancake Mix
  • 1 cup of soy or almond milk
  • Egg replacer (I recommend Ener-G, apple sauce, or banana)
  • Earth Balance Butter (if you like butter on your pancakes)
  • Maple Syrup (for drizzling)


Sizzle up strips of your favorite vegan bacon. Once they’re cooked thoroughly (about five minutes), remove from heat and chop into small chunks. Set aside.

Prepare Bisquick batter by adding the soy or almond milk and preferred egg replacer to your pancake mix.

Lightly grease a cooking pan with a little vegan butter and pour a scant ¼ cup of batter per pancake. Distribute a handful of bacon bits onto each pancake. Flip the pancake when bubbles form and cook for an additional 1-2 minutes on the other side. Repeat until no more batter is left!

Serve finished pancakes with a scoop of Earth Balance and drizzle of maple syrup.
