Vegan Brunch Recipe: Bacon Pancakes

These vegan bacon pancakes are the perfect way to kick off a lazy weekend morning. Plus, they are insanely easy to make! Did you know Bisquick Original pancake mix is vegan? Simply add egg replacer and nut milk and you’ve got yourself some plant-based pancakes! 

Vegan Bacon Pancakes Recipe Ingredients:

  • Bisquick Pancake Mix
  • Soy or almond milk 
  • Egg replacer (I recommend Ener-G, apple sauce, or banana)
  • Vegan bacon (we used Lightlife but there are many brands available—or you can make your own!)
  • Earth Balance Butter (if you like butter on your pancakes)
  • Maple Syrup (for drizzling)

This delicious vegan brunch recipe shows that you can enjoy all the bacon-y flavor without harming pigs. There are tons of vegan bacon products on the market, including vegan bacon strips made from tempeh, seitan, and soy, as well as coconut bacon flakes, vegan bacon grease (use for flavor), and vegan bacon bits that are perfect to sprinkle atop savory foods.
