Vegan Brunch Recipe: Bacon Pancakes

These vegan bacon pancakes are the perfect way to kick off a lazy weekend morning. Plus, they are insanely easy to make! Did you know Bisquick Original pancake mix is vegan? Simply add egg replacer and nut milk and you’ve got yourself some plant-based pancakes!

This delicious vegan brunch recipe shows that you can enjoy all the bacon-y flavor without harming pigs. There are tons of vegan bacon products on the market, including vegan bacon strips made from tempeh, seitan, and soy, as well as coconut bacon flakes, vegan bacon grease (use for flavor), and vegan bacon bits that are perfect to sprinkle atop savory foods. With all these animal-friendly options, there’s no need to get your bacon fix from an actual pig!

How to Serve Up Your Vegan Bacon Pancakes

We know, what more could you want to satisfy your palate with these incredible pancakes?! Well, we have a couple of suggestions for mouthwatering sides to make your brunch totally bombtastic:

  • Vegan Bacon and “Eggs” –  The year is 2021. There have never been more options for vegan bacon and eggless eggs. Egg alternatives such as JUST Egg or Follow Your Heart Egg are super easy to scramble up and taste ridiculously close to the real thing. Prefer to whip up some classic tofu instead?   • Fruit for Days – Whether you want to whip up a delicious strawberry smoothie or prefer a fruit salad, there’s no shortage of options when it comes to adding a bit of freshness to your meal.
  • Get Your Greens On – Maybe you like the burst of color or maybe you just can’t quite get your day started without a side of greens—whatever the reason is, you just know that you need them on your plate. Sauté up some spinach, bok choy, kale, or dandelion greens and you’ll be the Brunch Champ!

Amazing Add-Ons

What else could you possibly want to add to your bacon pancakes? Well, perhaps things like chocolate or fruit make your mouth water!

  • Chocolate All the Time – Can you imagine eating vegan bacon pancakes mixed with chocolate?! Grab some of your favorite chips to toss into your Bisquick Batter and let them melt right in. If you’d rather slather on some spread after your pancakes are done, this Vegan Nutella recipe is just the trick!
  • Fruit for Days – Fruit in bacon pancakes? Why, yes! Applesbananas and blueberries will all blend nicely with the bacon!

Storing Your Pancakes

These pancakes are definitely best enjoyed fresh but if you end up with leftovers, we’ve got you covered. Stick your pancakes in the fridge for two to three days in an airtight container or bag—make sure there’s no extra moisture otherwise the pancakes will get soggy and spoil even quicker. You can freeze them for up to two months by placing the pancakes into a freezer-safe bag with waxed paper between them to prevent sticking. Just be sure they’ve completely cooled down before refrigerating or freezing!

You’ll never want to go out to brunch again after eating these delicious vegan pancakes with veggie bacon! A true game-changer!


  • Vegan bacon (we used Lightlife but there are many brands available—or you can make your own!)
  • 2 cups of Bisquick Pancake Mix
  • 1 cup of soy or almond milk
  • Egg replacer (I recommend Ener-G, apple sauce, or banana)
  • Earth Balance Butter (if you like butter on your pancakes)
  • Maple Syrup (for drizzling)


Sizzle up strips of your favorite vegan bacon. Once they’re cooked thoroughly (about five minutes), remove from heat and chop into small chunks. Set aside.

Prepare Bisquick batter by adding the soy or almond milk and preferred egg replacer to your pancake mix.

Lightly grease a cooking pan with a little vegan butter and pour a scant ¼ cup of batter per pancake. Distribute a handful of bacon bits onto each pancake. Flip the pancake when bubbles form and cook for an additional 1-2 minutes on the other side. Repeat until no more batter is left!

Serve finished pancakes with a scoop of Earth Balance and drizzle of maple syrup.
